  • 3 cups cooked, shredded chicken (rotisserie chicken recommended)
  • 8 oz cream cheese (softened)
  • 1 cup sour cream
  • 1 cup cottage cheese (optional, adds creaminess)
  • 2 cups shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup crushed Ritz crackers (or any buttery crackers)
  • 2 tbsp melted butter
  • 2 tbsp chopped fresh parsley (optional for garnish)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine cream cheese, sour cream, cottage cheese (if using), mayonnaise, garlic powder, onion powder, salt, and pepper.
  • Stir in the shredded chicken and 1 1/2 cups of the cheddar cheese.
  • Spread the mixture evenly into a 9x13 inch baking dish.
  • Top with the remaining 1/2 cup cheddar cheese.
  • Mix the crushed Ritz crackers with melted butter, then sprinkle over the casserole.
  • Bake for 25-30 minutes or until bubbly and golden.
  • Garnish with fresh parsley, if desired.
