  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 (15 oz) can diced tomatoes
  • 1 cup tomato sauce
  • 2 cups uncooked pasta (rotini or penne)
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  • In a large pot or skillet, cook the ground beef over medium heat until browned. Drain excess grease.
  • Add diced onion and garlic, cooking until softened.
  • Stir in taco seasoning, beef broth, diced tomatoes, and tomato sauce. Mix well.
  • Add uncooked pasta, stir, and bring to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
  • Remove from heat, stir in shredded cheese and sour cream until creamy and well combined.
  • Season with salt and pepper to taste. Garnish with cilantro if desired. Serve hot.
