12 oz orecchiette pasta
1 lb Italian sausage, casings removed
2 cups fresh spinach, chopped
3 cloves garlic, minced
2 tbsp olive oil
1/4 cup grated Parmesan cheese (plus more for serving)
1/4 cup pasta water (reserved)
Salt and pepper to taste
Red pepper flakes (optional)
Instructions
Cook orecchiette pasta in salted boiling water according to package instructions. Reserve 1/4 cup pasta water, then drain.
In a large skillet, heat olive oil over medium heat. Add sausage, breaking it up with a spoon, and cook until browned.
Add garlic to the skillet and sauté for 1 minute until fragrant.
Stir in the spinach and cook until wilted, about 2 minutes.
Add the cooked orecchiette to the skillet along with the reserved pasta water. Toss everything to combine.
Sprinkle in grated Parmesan cheese, and season with salt, pepper, and optional red pepper flakes. Toss again to coat evenly.
Serve warm with additional Parmesan on top
