  • 12 oz orecchiette pasta
  • 1 lb Italian sausage, casings removed
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • 1/4 cup pasta water (reserved)
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  • Cook orecchiette pasta in salted boiling water according to package instructions. Reserve 1/4 cup pasta water, then drain.
  • In a large skillet, heat olive oil over medium heat. Add sausage, breaking it up with a spoon, and cook until browned.
  • Add garlic to the skillet and sauté for 1 minute until fragrant.
  • Stir in the spinach and cook until wilted, about 2 minutes.
  • Add the cooked orecchiette to the skillet along with the reserved pasta water. Toss everything to combine.
  • Sprinkle in grated Parmesan cheese, and season with salt, pepper, and optional red pepper flakes. Toss again to coat evenly.
  • Serve warm with additional Parmesan on top
