Ingredients

Scale
  • 1 lb ground beef (80/20 blend)
  • 1 large yellow onion, thinly sliced
  • 8 slices rye bread
  • 8 slices Swiss cheese
  • 4 tbsp butter
  • Salt and pepper to taste

Secret Sauce:

  • 1/4 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp pickle relish
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • Salt and pepper to taste

Instructions

  • In a skillet, melt 2 tbsp butter over medium heat and add onions. Cook, stirring occasionally, until caramelized, about 15-20 minutes. Set aside.
  • In a bowl, season ground beef with salt and pepper, then form into 4 thin patties.
  • Cook patties in a skillet over medium-high heat for 3-4 minutes per side until browned and cooked through. Remove and set aside.
  • To make the secret sauce, whisk together mayonnaise, ketchup, mustard, relish, garlic powder, paprika, salt, and pepper in a small bowl.
  • Butter one side of each rye bread slice. Place buttered side down on a skillet, add a slice of Swiss cheese, then top with a beef patty, caramelized onions, and another slice of cheese. Spread secret sauce on the other slice of bread and place it on top, buttered side up.
  • Grill sandwiches over medium heat until the bread is golden and the cheese is melted, about 3-4 minutes per side.
  • Serve hot with extra sauce on the side.

Notes

  • For extra flavor, add a slice of American cheese along with Swiss.
  • Use a cast-iron skillet for even browning and crisping of the bread.
  • The secret sauce can be made ahead and stored in the fridge.
