  • 1 whole chicken (3-4 lbs), butterflied

  • 4 cloves garlic, minced

  • 1 tbsp olive oil

  • 2 tbsp soy sauce

  • 2 tbsp lime juice

  • 1 tbsp white vinegar

  • 1 tbsp ground cumin

  • 1 tbsp paprika (preferably smoked)

  • 1 tsp oregano

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp chili powder (optional, for heat)

Instructions

  1. In a bowl, mix garlic, olive oil, soy sauce, lime juice, vinegar, and all spices.

  2. Rub the marinade all over the chicken, under the skin as well.

  3. Cover and refrigerate for at least 6 hours or overnight.

  4. Preheat grill to medium-high.

  5. Grill chicken skin-side down for 10-15 minutes until crisp.

  6. Flip and grill another 20–25 minutes until internal temperature reaches 165°F (74°C).

  7. Let rest for 5 minutes before slicing and serving.

Notes

  • For extra crispy skin, use indirect heat on the grill.

  • Serve with green sauce (ají verde) and rice or salad.

  • Can also be roasted in the oven at 425°F for 45–50 minutes.
