  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups shredded cheese
  • Fresh parsley or cilantro (optional)

Instructions

  • Preheat oven to 350°F. Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  • Add chopped onions, garlic, and bell peppers to the beef. Sauté until soft.
  • Stir in uncooked rice, beef broth, diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Bring to a boil, then reduce heat to simmer.
  • Cover and cook until the rice is tender, about 20 minutes.
  • Transfer the mixture to a casserole dish. Top with shredded cheese.
  • Bake for 15 minutes or until cheese is melted and bubbly.
  • Garnish with fresh parsley or cilantro before serving (optional).

Notes

 

For a lighter version, substitute ground turkey for beef. You can also use brown rice for added fiber.
