  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 6 cups chicken or vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 8 oz mushrooms, sliced
  • 1 cup bok choy, chopped
  • 12 frozen potstickers (any variety)
  • 2 green onions, sliced
  • 1/2 tsp red pepper flakes (optional)
  • Salt & pepper to taste

Instructions

  • Heat oil in a pot over medium heat. Add garlic and ginger, sauté until fragrant.
  • Pour in broth, soy sauce, rice vinegar, and sesame oil. Bring to a simmer.
  • Add mushrooms and cook for 5 minutes.
  • Gently add potstickers and cook according to package instructions.
  • Stir in bok choy and cook until wilted, about 2 minutes.
  • Season with salt, pepper, and red pepper flakes (if using).
  • Serve hot, garnished with green onions.
