  • 1 teaspoon onion powder

  • Salt and pepper to taste

  • 1 can (10.5 oz) cream of chicken soup

  • 1/2 cup sour cream

  • 1/2 cup chicken broth

  • 1 teaspoon paprika

  • 1 cup uncooked white rice

  • 2 cups water or chicken broth (for rice)

  • Fresh parsley (for garnish, optional)

Instructions

  1. Season chicken with garlic powder, onion powder, salt, and pepper.

  2. Heat olive oil in a skillet over medium heat. Add chicken and sear for 3–4 minutes on each side until browned. Remove and set aside.

  3. In the same skillet, whisk together cream of chicken soup, sour cream, chicken broth, and paprika.

  4. Return the chicken to the skillet, reduce heat, and simmer covered for 20–25 minutes or until chicken is cooked through.

  5. Meanwhile, cook the rice in water or broth according to package instructions.

  6. Serve the creamy chicken over the rice and garnish with chopped parsley if desired.

Notes

  • Substitute sour cream with Greek yogurt for a lighter version.

  • Use rotisserie chicken for an even quicker meal.
