Ingredients

  • 8 slices rye bread
  • 1 lb roast beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 8 slices Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 2 tbsp butter, softened

Instructions

  • Preheat a skillet or griddle over medium heat.
  • Spread butter on one side of each slice of rye bread.
  • Place 4 slices, butter side down, on the skillet.
  • Layer with roast beef, sauerkraut, Thousand Island dressing, and Swiss cheese.
  • Top with remaining slices of bread, butter side up.
  • Cook sandwiches for 3-4 minutes per side, or until bread is golden brown and cheese is melted.
