  • 1 lb ground beef
  • 1 can Rotel diced tomatoes with green chilies (10 oz)
  • 8 oz pasta (penne or rotini)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and onions are softened, about 7-8 minutes. Drain any excess fat.
  • Stir in the Rotel tomatoes, garlic powder, paprika, salt, and pepper. Let the mixture simmer for 5 minutes.
  • Reduce heat to low, then stir in the cream cheese and sour cream until melted and fully combined.
  • Add the cooked pasta to the skillet and stir to combine everything evenly.
  • Sprinkle the shredded cheddar and mozzarella cheeses over the top and stir until melted and creamy.
  • Garnish with fresh cilantro, if desired, and serve hot.
