1 lb sausage (sliced)
2 medium sweet potatoes (cubed)
2 tbsp olive oil
3 tbsp honey
3 cloves garlic (minced)
1 tbsp soy sauce
1 tsp Dijon mustard
½ tsp paprika
½ tsp salt
¼ tsp black pepper
1 tbsp fresh parsley (chopped, for garnish)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss sweet potatoes with 1 tbsp olive oil, salt, pepper, and paprika. Spread on the baking sheet and roast for 15 minutes.
In a pan, heat 1 tbsp olive oil over medium heat. Add sliced sausage and cook until browned. Set aside.
In a small bowl, mix honey, soy sauce, Dijon mustard, and minced garlic.
Remove sweet potatoes from the oven, add sausage, and drizzle with the honey garlic sauce. Toss to coat.
Return to the oven and bake for another 10 minutes until caramelized.
Garnish with fresh parsley and serve warm.
