For the Meatloaf:

  • 1 lb ground beef (or turkey)
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 egg
  • ¼ cup ketchup
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano

For the Mashed Potato Frosting:

 

  • 2 cups mashed potatoes
  • ¼ cup butter
  • ¼ cup milk
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Preheat Oven to 375°F (190°C). Grease a muffin tin.
  • Mix Meatloaf Ingredients in a bowl until well combined.
  • Portion into Muffin Tin evenly, pressing gently.
  • Bake for 20-25 minutes or until cooked through (internal temp 160°F).
  • Prepare Mashed Potatoes by mashing together butter, milk, salt, and pepper.
  • Pipe or Spread Mashed Potatoes onto meatloaf muffins after baking.
