Scale
  • 12 oz fettuccine pasta
  • 1 lb sirloin or filet mignon, sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated Parmesan cheese
  • ½ cup crumbled Gorgonzola cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp chopped parsley
  • ¼ cup beef broth
  • ¼ cup white wine (optional)

Instructions

  • Cook Pasta: Boil fettuccine in salted water until al dente. Drain and set aside.
  • Sear Steak: Heat olive oil in a skillet over medium-high heat. Sear steak slices until browned. Remove and set aside.
  • Make Sauce: In the same skillet, melt butter and sauté garlic. Add heavy cream, milk, Parmesan, and Gorgonzola. Stir until smooth.
  • Add Seasoning: Stir in salt, pepper, and red pepper flakes. Add beef broth and wine, simmering for a few minutes.
  • Combine: Toss pasta in the sauce, then add the steak back in. Mix well.
  • Serve: Garnish with chopped parsley and extra Parmesan. Enjoy!

Notes

  • Use filet mignon for a more tender steak option.
  • Adjust the Gorgonzola amount for a milder or stronger flavor.
  • Substitute half-and-half for a lighter sauce.
