This Skillet Chicken and Mushroom Wine Sauce recipe delivers tender chicken simmered in a rich, savory wine sauce with mushrooms. It's an easy, delicious one-pan meal that pairs perfectly with rice, pasta, or crusty bread.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • Optional garnish: chopped parsley

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
  3. In the same skillet, sauté mushrooms until softened. Add garlic and cook for 1 minute.
  4. Deglaze the pan with white wine, scraping up any browned bits. Stir in chicken broth and thyme.
  5. Return chicken to the skillet, cover, and simmer for 10-12 minutes until cooked through.
  6. Remove chicken, stir in heavy cream, and simmer the sauce for 2 minutes until thickened.
  7. Serve chicken topped with the mushroom wine sauce. Garnish with parsley if desired.

Notes

  • Use a good-quality dry white wine, like Sauvignon Blanc or Pinot Grigio.
  • For a dairy-free option, replace heavy cream with coconut milk.
  • Serve with mashed potatoes, pasta, or steamed vegetables for a complete meal.
