Slow Cooker Cowboy Sandwiches are the ultimate comfort food, featuring tender beef slow-cooked to perfection with BBQ sauce, onions, and spices, then served on toasted buns. This hearty sandwich is perfect for family dinners or casual gatherings. Easy, delicious, and packed with flavor!

  • 2 lbs beef chuck roast
  • 1 cup BBQ sauce
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 4-6 sandwich buns
  • Optional: Pickles, cheese slices, or coleslaw for topping

Instructions

  • Place beef chuck roast in a slow cooker.
  • Add BBQ sauce, sliced onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper on top of the beef.
  • Cover and cook on LOW for 8-9 hours or on HIGH for 4-5 hours, until the beef is tender and easily shredded.
  • Remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix it with the sauce.
  • Toast the sandwich buns if desired, then pile the shredded beef onto the buns.
  • Add optional toppings like pickles, cheese slices, or coleslaw before serving.

Notes

  • You can substitute beef chuck roast with pork shoulder for a different flavor.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
  • Serve with a side of fries, chips, or salad for a complete meal.
