  • 1 cup cooked rice (optional)
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup sour cream (optional)
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 8 large flour tortillas
  • 1 1/2 cups red enchilada sauce
  • 1 cup shredded cheese (for topping)
  • Fresh cilantro and diced green onions (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix shredded chicken, rice (if using), black beans, shredded cheese, sour cream, chili powder, cumin, and garlic powder until well combined.
  3. Place about 1/2 cup of the chicken mixture in the center of each tortilla. Roll up tightly and place seam-side down in a greased baking dish.
  4. Pour enchilada sauce evenly over the burritos, covering them completely.
  5. Sprinkle 1 cup of shredded cheese on top.
  6. Bake for 20-25 minutes, or until cheese is melted and burritos are heated through.
  7. Garnish with fresh cilantro and diced green onions before serving.
