Delight in a warm, cozy Snickerdoodle Cobbler, a twist on the classic cookie with a gooey center and a cinnamon-sugar crust. This dessert combines rich flavors and a melt-in-your-mouth texture, perfect for fall or anytime you crave a warm dessert treat.

  • 1 cup all-purpose flour
  • 1 ½ cups granulated sugar, divided
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • ½ cup butter, melted
  • 1 tbsp cinnamon
  • 1 ½ cups boiling water

Instructions

  • Preheat oven to 350°F (175°C).
  • In a bowl, combine flour, ¾ cup sugar, baking powder, and salt.
  • Stir in milk and melted butter until well mixed, then pour into a greased baking dish.
  • In a separate bowl, mix remaining sugar and cinnamon. Sprinkle this evenly over the batter.
  • Carefully pour boiling water over the top of the mixture. Do not stir.
  • Bake for 45-50 minutes, or until the top is golden brown and bubbly.
  • Let cool slightly before serving. Serve warm with ice cream, if desired.

Notes

  • For an extra gooey texture, check at the 45-minute mark; bake longer for a more set cobbler.
  • Serve immediately for the best texture, as it thickens upon cooling.
