  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 1 tsp vanilla extract

For the Honey Butter Glaze:

  • 1/4 cup unsalted butter, melted
  • 2 tbsp honey

Instructions

  • Preheat oven to 375°F (190°C). Grease a mini muffin tin.
  • In a bowl, whisk cornmeal, flour, sugar, baking powder, and salt.
  • In another bowl, mix buttermilk, eggs, melted butter, honey, and vanilla.
  • Combine wet and dry ingredients, stirring until just mixed.
  • Spoon batter into the mini muffin tin, filling each cup about ¾ full.
  • Bake for 12-15 minutes or until golden and a toothpick comes out clean.
  • Mix melted butter and honey for the glaze. Brush over warm poppers.
  • Serve warm and enjoy!
