1 cup cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 cup buttermilk
2 eggs
1/4 cup unsalted butter, melted
1/4 cup honey
1 tsp vanilla extract
For the Honey Butter Glaze:
1/4 cup unsalted butter, melted
2 tbsp honey
Instructions
Preheat oven to 375°F (190°C). Grease a mini muffin tin.
In a bowl, whisk cornmeal, flour, sugar, baking powder, and salt.
In another bowl, mix buttermilk, eggs, melted butter, honey, and vanilla.
Combine wet and dry ingredients, stirring until just mixed.
Spoon batter into the mini muffin tin, filling each cup about ¾ full.
Bake for 12-15 minutes or until golden and a toothpick comes out clean.
Mix melted butter and honey for the glaze. Brush over warm poppers.
Serve warm and enjoy!

Use a mini muffin tin for the perfect popper size.
