  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, sliced
  • 1/2 cup strawberry preserves

Instructions

  • Prepare Crust: Combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan, and bake at 350°F (175°C) for 10 minutes.
  • Make Filling: In a mixing bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Add vanilla extract and mix.
  • Bake Cheesecake: Pour filling over crust, spreading evenly. Bake at 325°F (160°C) for 55-60 minutes, or until center is set.
  • Chill & Add Topping: Cool and refrigerate for at least 4 hours. Top with sliced strawberries and spread a thin layer of strawberry preserves over top before serving.

Notes

  • To prevent cracks, bake the cheesecake in a water bath.
  • For extra flavor, mix in a teaspoon of lemon juice with the filling.
