  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves (minced)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Cut a pocket into each chicken breast without slicing all the way through.
  • In a bowl, mix spinach, mozzarella, Parmesan, garlic, and Italian seasoning.
  • Stuff each chicken breast with the filling and secure with toothpicks.
  • Season the outside with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden.
  • Transfer the chicken to a baking dish and bake for 20-25 minutes or until fully cooked (internal temperature of 165°F).
