These Sweet Strawberry Shortcake Cheesecake Rolls are a delightful fusion of creamy cheesecake, fresh strawberries, and soft cake rolls. Perfect for any occasion!

  • 1 cup fresh strawberries, diced
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 4 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 tbsp melted butter
  • 1/2 cup strawberry jam
  • Crushed shortbread cookies (for topping)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, beat eggs and granulated sugar until light and fluffy.
  • Fold in flour, baking powder, and salt, then add milk and melted butter. Mix gently.
  • Pour batter into the prepared pan and bake for 12-15 minutes.
  • Remove from oven, roll cake in parchment paper, and let cool.
  • Beat cream cheese, powdered sugar, and vanilla until smooth.
  • In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cheesecake mixture.
  • Unroll the cake, spread strawberry jam and cheesecake filling evenly, then sprinkle diced strawberries.
  • Roll the cake back up tightly and refrigerate for 1-2 hours.
  • Before serving, sprinkle crushed shortbread cookies on top and slice.

Notes

  • For extra flavor, add a drizzle of strawberry syrup.
  • Use chilled heavy cream for best whipping results.
