1 cup fresh strawberries, diced
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup heavy cream
1/4 cup granulated sugar
4 large eggs
1/2 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
1/2 cup milk
2 tbsp melted butter
1/2 cup strawberry jam
Crushed shortbread cookies (for topping)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, beat eggs and granulated sugar until light and fluffy.
Fold in flour, baking powder, and salt, then add milk and melted butter. Mix gently.
Pour batter into the prepared pan and bake for 12-15 minutes.
Remove from oven, roll cake in parchment paper, and let cool.
Beat cream cheese, powdered sugar, and vanilla until smooth.
In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cheesecake mixture.
Unroll the cake, spread strawberry jam and cheesecake filling evenly, then sprinkle diced strawberries.
Roll the cake back up tightly and refrigerate for 1-2 hours.
Before serving, sprinkle crushed shortbread cookies on top and slice.
Notes
For extra flavor, add a drizzle of strawberry syrup.
