  • 1 lb (450g) ground beef (or substitute ground turkey, chicken, or plant-based meat)
  • 4 cups frozen shredded hash browns
  • 1 packet taco seasoning
  • 1 medium diced onion (yellow or white)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed (optional)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (or Mexican cheese blend)
  • 1 cup salsa (mild, medium, or hot)
  • Cilantro (optional)
  • Tortilla chips (for topping)

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
  • In a skillet, cook ground beef with diced onion until browned; drain excess fat.
  • Add taco seasoning and diced tomatoes with green chilies; stir until well combined.
  • Layer frozen hash browns in the prepared casserole dish.
  • Spread the beef mixture over the hash browns, followed by a layer of black beans (optional).
  • Add a layer of salsa, followed by sour cream, and sprinkle shredded cheese on top.
  • Bake uncovered for 25-30 minutes or until cheese is melted and bubbly.
  • Garnish with cilantro and crushed tortilla chips before serving.

Notes

  • For a vegetarian option, substitute the beef with plant-based meat or add more black beans.
  • Use mild salsa for less heat, or opt for spicy salsa if you prefer extra kick.
  • You can use cubed hash browns if shredded aren’t available.
