This chicken fajitas recipe delivers tender, juicy chicken seasoned with bold spices, sautéed peppers, and onions. Ideal for a healthy and flavorful meal, it's a family favorite and perfect for a quick weeknight dinner.

  • 1 lb boneless, skinless chicken breasts (sliced into thin strips)
  • 3 bell peppers (assorted colors, sliced)
  • 1 large onion (sliced)
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of 1 lime
  • Warm tortillas (for serving)
  • Optional toppings: sour cream, shredded cheese, guacamole, salsa

Instructions

  • In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper.
  • Toss the chicken strips with half of the spice mix and lime juice. Set aside to marinate for 15 minutes.
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook until fully cooked (about 6-8 minutes). Remove and set aside.
  • In the same skillet, heat the remaining 1 tbsp olive oil. Add sliced bell peppers and onions, sprinkle with the remaining spice mix, and sauté until tender (about 5 minutes).
  • Return the chicken to the skillet and toss with the veggies. Cook for 1-2 minutes until heated through.
  • Serve hot with warm tortillas and your favorite toppings.

Notes

  • For extra heat, add a pinch of cayenne pepper or red chili flakes to the spice mix.
  • This recipe can be made ahead; store the cooked chicken and veggies in the fridge for up to 3 days.
  • Use whole wheat or low-carb tortillas for a healthier option.
