  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole milk
  • ½ cup brewed espresso or strong coffee (for soaking)

Mascarpone Frosting:

  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • Cocoa powder, for dusting

Instructions

  • Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
  • In a bowl, whisk together flour, baking powder, and salt.

  • Add eggs one at a time, then mix in vanilla extract.
  • Alternately add dry ingredients and milk, mixing until just combined.
  • Divide batter into liners and bake for 18–20 minutes until a toothpick inserted comes out clean.
  • Once cooled, brush or drizzle espresso over cupcakes.
  • For frosting, whip mascarpone, heavy cream, powdered sugar, and vanilla until stiff peaks form.

Notes

  • Use cooled espresso to prevent cupcakes from becoming soggy.
  • Keep refrigerated until serving for best texture.
  • Add a sprinkle of grated chocolate for extra flavor.
